At only 30 years old, Laura Pelou is preparing to open her second restaurant in Toulouse. In addition to her establishment in Aveyron, the young chef has just launched Gram’s, a new gourmet address to discover rue de la Colombette.

Distinguished by Michelin and Gault & Millau

Despite her young age, Laura Pelou already enjoys a good reputation thanks to her restaurant Le Jardin des Causses, located in Villeneuve (Aveyron). the Michelin Guide recommends the establishment in these terms: “The recipes are well put together, and are accompanied by a short list of well-chosen wines. A good address. »

The young chef was also honored by the Gault & Millau who awarded him a Young Talent prize in 2021. “It is an endowment of equipment and merchandise, explains the young woman. It’s a nice little helper to launch Gram’s. »

In tribute to Lucette and Paulette

Gram’s: the name was chosen as a diminutive to grandmother. Because with this new restaurant, Laura Pelou wants to pay tribute to her two ancestors, Lucette and Paulette.

“The guideline of my cuisine is Aveyron, even if I try to lighten the recipes a little,” smiles the young woman. I modernize those of my grandmothers! »

Gourmet touch

A modern bistro kitchen with a gourmet touch. Laura Pelou has indeed worked in several starred restaurants. Like En plein nature, Sylvain Joffre’s establishment in Quint Fonsegrives. “He is the one who inspired me. The natural side, the simplicity, when it’s so complicated to make it simple. It all speaks to me. »

At Gram’s, for example, you can enjoy a grandma’s prank accompanied by a coulis of beets in vinegar or a soft-boiled egg with a squash texture with an emulsion and old Rodez crumble, a aveyron parmesan cheese. At lunchtime, the starter-main course-dessert formula is 24 euros with new proposals every day. In the evening, the dishes are eaten à la carte.
