Montauban. Like roosters at the table of “My Little Chickens”

After sublimating, not so long ago, the cuisine of the Café Durand, in Montauban, Charlotte-Marie Dominguez took the reins of the new restaurant Mes Petits Poulets which took up residence, this fall, in the former bistro des Vendanges, in the Faubourg Lacapelle.

A new adventure that the young chef will live with the family, in association with Christophe Bajon, known to many Tarn-et-Garonne and Moissaga residents for having run the Kiosk, in the uvale city.

At the table of Mes Petits Poulets, everything must breathe joy and good humor, right down to the service with little onions. On the slate and the menu, as the name of the restaurant suggests, cockerels are the stars. As they were raised on corn, in the Landes, their flesh remains soft. The formula provides for serving them whole (500-600 grams, or half). As an accompaniment to poultry, several possibilities are offered. Vegetables, sauces, fries, salads… Charlotte-Marie will vary the pleasures, always seeking to reinforce the generous side and change of scenery with its dish. In season, pan-fried porcini mushrooms can compete with our little gallinaceae. Or complement them. And why not also pancakes. “We have planned to have themed evenings, tapas, etc. The cooking that I do is quite simple to make on a technical level. As long as these dishes are made with top quality products, like my cockerel, everything becomes simply extraordinary!”

Extraordinary, but to accompany with a small glass of wine of the moment. And there, it is the part of Christophe who also worked for a long time for the Château de Lagrezette.
