At 34, Lea Clerynative Mayenne but expatriated in Paris for twenty years, decided to return to the sources. After a rich professional career in the field of restoration, she wants to open her own restaurant in Mayenne.
I started in the kitchen in a brasserie before getting involved in events for a cooking school for individuals. But I didn’t have my hands dirty enough so I became a chef at home. The network for which I worked offered me to become operational director. So I created around forty menus a week.
After a few other “extremely enriching” experiences, the young woman chose to leave the capital. “Mayenne imposed itself because I have my family there, and the living environment is super nice. There is a demand for catering today. Léa Cléry launched an online questionnaire to find out the expectations of the people of Mayenne and she received more than 200 responses in just a day and a half. ” It is really encouraging. »
Currently in training with the Chamber of Trades and Crafts, Léa is trying to find premises that suit her needs and allow her to open her establishment in 2023. “I would like a restaurant with around thirty seats, for highlight the local products and their producers, with simple formulas. No more than three à la carte dishes but which change every week. I plan, as the Mayenne people seem to expect, to open on Sundays, and to organize cooking or pastry workshops. »
