At the fish market Haven (Seine Maritime), the opening of the Saint-Jacques season, Monday, October 3, 2022, did not go unnoticed. As soon as they arrived on the shelves, the shells were taken by storm! It must be said that they have something to please. “She is magnificent, very thick, fleshy”, rejoices Sylvia, of the coquillard baptized “ Fat Twink ». A nice surprise for the owner’s wife.

Five euros per kilo, 30 euros per tray

Sold for 5 euros per kilo or 30 euros for a tray of 32 to 34 walnuts, it was awaited “impatiently”. “Like every year,” smiles David, a former sailor, regular at the fish market. “She is magnificent for a start,” he notes, mouth watering.

So when Sylvia delivers some of her favorite recipes, it’s hard not to succumb. “I sauté it in a pan with a little butter, then flambé with whiskey. Afterwards, I deglaze with cream and nutmeg. » Another recommendation for a guaranteed effect: « For the aperitif, I put a scallop cut in half on blinis with tomato concentrate with basil, parsley butter… And it’s not even two minutes in the oven . »

For now, not all fishing areas are open. Professionals are now impatiently awaiting the green light from the prefecture for fishing in the Baie de Seine deposit, which will take place during the month of November and whose resources are estimated at 85,000 tonnes by the French Research Institute for exploitation of the sea (Ifremer).
