Aveyron: starred chef Hervé Busset is moving to Rodez and the ET restaurant is heading to Conques!

Émilie and Thomas Roussey leave their Ruthenian restaurant in the Place du Bourg to settle in Conques, in the establishment of Hervé Busset who will set up his kitchen in the Aveyron capital, in the restaurant of Emilie and Thomas.

The rumor had been circulating for a while. It was made official this Friday, November 4, 2022. A “switch”, an important exchange will take place in the middle of Aveyron gastronomy.

At the beginning of the year, Emilie and Thomas Roussey, chefs of the restaurant ET located on the Place du Bourg in Rodez will settle in the establishment of Hervé Busset, at the Moulin de Cambelong, in Conques. And Hervé Busset, one of the five starred chefs from Aveyron, with Nicole Fagegaltier, Michel Truchon, Guillaume Viala and Sébastien Bras, will set up his kitchen instead of the ET restaurant.

Soon a starred restaurant in Rodez?

“After having dreamed a lot about it, we are going to take advantage of the winter to make our new showcase of flavors a reality at the Moulin de Cambelong in Conques and hope to welcome you there from the first days of spring” explain Emilie and Thomas in a press release. They will baptize their new setting… “ET”. But until the end of the year, they will provide service in their restaurant in the Place du Bourg.

As for Hervé and Dominique Busset, they have not hidden their desire for a long time to get closer to Rodez, especially after the acquisition in 2014 of the Château de Canac, at the gates of Rodez, where they have installed guest rooms. On October 30, they provided the last service and announced to their customers that they would return in 2023 to their restaurant, which should probably be called “La table d’Hervé Busset”.
