On the heights of the town of La Pomaredea 17th century bridgee century leads to an imposing rampart. Passing the entrance, barely wide enough for a car, we find the square of this small village in theAude. In front of the town hall, a beautiful building of the XIe century dominates the plains of Lauragais. It’s about La Pomarede castle. Inside, a well-known hotel-restaurant in the region.
Quentin Delahaye and Marine Pires are the new bosses. As a couple in the city, the two young Ile-de-France residents now manage the famous gastronomic establishment, formerly Michelin-starred (until 2016). The doors have recently closed, the former managers left on October 31, 2022. They are due to reopen on Sunday, November 20.
A new life plan
Both 28 years old, Quentin Delahaye and Marine Pires come barely landed from Yvelines for their new life project. He has ten years of experience in the hotel business and will be in charge of the kitchen. She previously worked in the administration of a town hall, but has experience as a waitress in a family restaurant.
Both make “the pair” enthuses Quentin Delahaye. While he is in the kitchen, his partner will take care of customers and communication. “We both love the restaurant business. We wanted to work together. It was our goal in life,” explains Marine Pires.

It remained to find the project. The Château de La Pomarède produced “the wow effect! ” sought. The couple now rents the premises from the town hall, owns the business and lives on the top floor. To their delight: “It’s sublime! How did we manage to stay there (in the Paris region, editor’s note) all this time? asks Quentin. “We were expected and we were very well received. The people of the village are very benevolent, ”adds Marine.
The goal now is to carry out some work for the reopening of the restaurant. In the main room, the chairs are still lined up on the tables, the shutters closed. On the walls, the decorations of the old team are still there. Marine and Quentin imagine some changes : “We want to put our paw! We’re probably going to get rid of the frames, maybe the clock. And we want to add plants”, think aloud the two managers.
The restaurant is hiring
For its reopening, the Château de La Pomarède has started its recruitment but it is not yet closed, especially in the kitchen. “We need motivated young people, not necessarily with experience,” explains Quentin Delahaye. Objective: to be three in the kitchen and three in the dining room.
A bistro menu
On the menu of this restaurant with about forty seats (80 with the two terraces)? A “bistronomic” menu, explains Quentin Delahaye. “With a maximum of products from the short circuit, organic, fresh and seasonal…” The price of a menu? “Around thirty euros without drink,” replies the cook. A lunch formula will also be offered for around €20.
That’s not all. Quentin and Marine are already considering other proposals for 2023: aperitif tapas in the afternoon or well-stocked brunches on Sundays. “We want to recreate life in this village”, announce the two restaurateurs.
They also intend to offer a grocery corner with products from their local collaborators in the reception. Not far from here, a reception room will always be privatized.
The hotel will reopen in 2023
The hotel, with seven rooms of various sizes located upstairs, will also be refreshed. The carpets will give way to parquet and some bathtubs will be replaced by showers. Unlike the restaurant, it will not reopen immediately. We will have to wait until the year 2023.
The restaurant of the Château de la Pomarede will be open from Tuesday at 12 p.m. to Sunday at 12 p.m..
